According to Elaine Lemm, this is a great base recipe for a quick and filling meal.

Ingredients:

  • 150g macaroni or spirali pasta
  • 1 tbsp. corn flour
  • 185ml milk
  • 1 tsp Dijon mustard
  • 45g mature gruyère, grated
  • 45g extra mature cheddar, grated
  • 2 tbsp parmesan, grated
  • 15g unsalted butter

Method:

STEP 1

Put the pasta in a ceramic or glass microwavable bowl. Pour over 700ml boiling water and cook for 2 mins on high; stir and repeat twice more (6 minutes in total). Drain the pasta and return it to the bowl.

STEP 2

Put the cornflour and 1 tablespoon of milk into a jug and stir to make a paste. Add the remaining milk and mix well. Pour over the pasta.

STEP 3

Mix in the mustard, along with the grated gruyère and cheddar, and stir well. You can cook the pasta in the same bowl or tip it into a microwavable serving dish.

STEP 4

Cook on high for 5 minutes, stirring halfway through. Sprinkle over the parmesan and dot with small pieces of butter. Cook for a further 2 minutes, then serves with a good grating of black pepper, if you like.

Microwave scrambled eggs

Mornings are always busy, especially on weekdays, which calls for quick and easy food that is also fresh and nutritious.

Cassie Best of BBC good food, explains this protein-rich dish takes just 4 minutes in the microwave.

Ingredients:

  • 2 eggs
  • 2 tablespoons whole milk
  • Toast, to serve

Method

STEP 1

Use a fork to beat together the eggs, milk, and a pinch of salt in a microwave-safe jug. Cook in the microwave on High for 30 seconds, then beat again and return to the microwave for another 30 seconds.

STEP 2

Beat again, breaking up any lumps of egg. Microwave for another 15 seconds, then beat again; the eggs will be loose at this stage so serve them straightaway if this is how you like them. If you prefer your eggs a little firmer, microwave for a further 15 seconds, beat, then serve.

Microwave Brownies

Everybody needs a bit of sugar after dinner. Try these microwave brownies that you can indulge in just 15 minutes.

Ingredients:

  • 75g butter, plus a little extra for greasing
  • 50g peanut butter
  • 1 egg
  • 25g cocoa powder
  • 50g plain flour
  • 100g sugar
  • few teaspoons of jam

Method:

STEP 1

Add the butter and peanut butter to a microwave-safe bowl and cook on high for 30 secs to melt. Remove from the microwave and stir thoroughly. Allow to cool slightly then add the egg and stir to combine. Grease with butter and line a second microwaveable round dish (about 15cm wide) with cling film. Tip the peanut butter mixture into the lined dish then sieve in the cocoa powder and flour and tip in the sugar. Mix gently to form a thick, sticky paste. Smooth the top of the mixture with the back of a large spoon.

STEP 2

Using a teaspoon, make crater holes in the top of the brownie mixture and fill each generously with jam as it will melt and bubble down when cooked. Pop in the microwave for 3-4 mins on High. Remove and leave to cool for 15 mins (it will carry on cooking as it cools) then enjoy!
