Mareleigh’s Cola Marinated Leg of Lamb
Ingredients
1 Lamb Leg
2 1/2 Cups coarsely chopped carrots
2 medium potatoes unpeeled cut into wedges
3 celery sticks coarsely chopped
1 butternut pitted and sliced
500ml Coca Cola
500ml sweet red wine
20ml vinegar
50ml Worchester Sauce
50ml soy sauce
1 packet Spare Rib Marinade
125ml honey
3 tablespoons All Spice
4 bay leaves
A few whole cloves
Method
Note: You need two nights to prepare the leg of lamb
- First, prepare marinade as per packet and add 250ml of the Coca Cola, let leg marinade in it until night before feast.
- Layer vegetables in big oven pan creating a bed for your leg of lamb.
- Place the marinated leg on top, pouring marinade over.
- Mix the rest of Cola, wine, vinegar, soy and Worchester sauce. Pour around the meat onto vegetables.
- Sprinkle the meat with the allspice and a pinch of salt.
- Place bay leaves close around leg. Gently push in some whole cloves into the meat.
- Cover the meat with tin foil and place in a preheated oven of 180 degrees Celsius.
- Check occasionally and bake until meat is cooked through.
Morning of feast
- Remove tin foil and brush meat with honey.
- Bake in oven at 100 degrees Celsius uncovered for 1hour and 30 minutes.
- Take out, brush a little more honey on top with a light sprinkle of all spice.
- Place in oven again for only 30 mins; take out.
- Remove Bay leaves and cloves.
- Slice thinly and serve with English mustard (optional) and enjoy
